Heirloom Tomato Panzanella Salad, Roasted Eggplant with Basil and Roasted Tomato melted fresh Mozzarella, Cavaletti pasta

You have to finish the salad during that meal because it just does not keep well as leftovers. Like most Italian dishes which are meant to feed an army- or Italian family- we just could not finish it. Luckily, our good friends and neighbors were generous enough to take the remainder off of our hands. Thanks guys!
